Cookery - Desserts
Course aims
To enable learners to create a range of appetizing and nutritious deserts from cooked and fresh ingredients.
Learning outcomes
By the end of the course you will:
- Be able to select and combine fresh fruits to create simple complementary flavours
- Be able to use roasting and baking techniques to create crumbles, pies and baked fruits
- Know when and how to use cream, crème fraîche and custard to compliment other ingredients
- Be able to present food attractively
- Know how to use kitchen equipment and appliances correctly and safely
- Understand the importance of personal and kitchen hygiene for cooking
- Be aware of employment opportunities in the catering industry
Who is the course for?
For learners who would like to produce a range of desserts from recipes.
Do I need any knowledge, skills or qualifications?
Basic literacy and numeracy (free help is available within BAES if required). At the start of this course, your tutor will carry out an initial assessment to check that the level is suitable for you.
Will I gain any qualifications?
No, this is a non-accredited course.
How will I learn?
- Tutor demonstration and presentation
- Practical exploration of equipment and techniques
- By doing a small amount of background research
- By producing a portfolio
What could this course lead to?
Intermediate level study or a level 1 qualifications in cooking or catering.
What materials or equipment will I need to provide?
Tutor will advise at enrolment. There will be a cost for materials and equipment for this course.
