Fine Dining - Intermediate

Course aim

This course will enable you to build upon your existing cooking skills to produce classic dishes, using a range of techniques and ingredients and presented to a high standard.

Course length

22.5 hours – usually 9 weekly sessions of 2.5 hours.

Who is this course for?

Anyone who already has basic cooking skills but would like to learn how to get the best from ingredients, using a range of cooking and food-plating techniques.

Will I gain a qualification on this course?

No - this is a non-accredited course.

Do I need any knowledge, skills or qualifications?

To get the best from this course you will need experience of basic cookery techniques. Also, as the course involves taking notes as well as using weights and measurements, you will need to have basic levels of English and Maths. You will have a short initial assessment at the start of the course to ensure that it is suitable for you.

Course content

You will learn:

  • how, and for which particular dishes, to carry out roasting, broiling, frying, poaching, sautéing, braising and steaming correctly
  • how to use knives for cutting, slicing, dicing and Julienne vegetables safely
  • how to use a range of kitchen implements and equipment safely and correctly
  • how to select good quality, fresh ingredients
  • how to cook a range of classic dishes and sauces
  • a range of food plating techniques
  • to produce samples of techniques with instructions in your portfolio
  • an awareness of employment opportunities in the catering industry.

What could this course lead to?

Further courses in cookery techniques at intermediate or advanced level. You may also want to do a qualification at Level 1 or 2, which could help you to get a job in catering.

How will I learn?

You will learn through:

  • tutor demonstration and instruction
  • exploring equipment, tools and techniques
  • cooking a range of dishes in class and at home
  • producing a small portfolio containing recipes, information on techniques you have learned, and photographs of dishes that you have made.

Your commitment as a learner

To achieve success on the course you will need to attend regularly, and on time. If you need to miss a class, please let us know in advance.

You will need to ensure that you allow sufficient time for self-study and complete any homework set. You will be expected to complete all assessments and complete the full course.

What materials or equipment will I need to provide?

In addition to the course fees, ingredients will cost between £5 and £8 per session, depending on the quantity and quality of the goods you purchase. For the first session you will only need to bring a pen, writing pad and folder. The tutor will demonstrate the dish or meal that you will cook in the second session

You will need to wear appropriate protective clothing whilst in the training kitchen, including a full length apron or white overall and protective head covering such as a clean headscarf or hat.

Important - the course fees for this qualification do not cover the cost of equipment and materials such as protective clothing.
