Prepare for Work in Catering – Level 1 Award
Course aims
This course will enable you to develop a range of food preparation, cooking and serving skills and techniques required for working in the catering industry.
Course length
81 hours – usually 27 weekly sessions of 3 hours.
Who is this course for?
This course is for people who are considering work or self-employment in catering and want to gain a Level 1 qualification in cookery.
Will I gain a qualification on this course?
Yes. NCFE Level 1 Award in Creative Craft in Cookery.
Do I need any knowledge, skills or qualifications?
Ideally you will need to have some basic experience of cooking. The course also involves taking notes, weighing and measuring, so you will need to have basic levels of English and maths. You will have a short initial assessment at the start of the course to ensure that it is suitable for you.
Course content
You will learn about:
- a variety of preparation techniques including chopping skills
- how to present and display food
- how to adapt recipes to larger quantities
- how to cook using different methods
- Health and Safety awareness
- employment opportunities in the catering industry.
How will I learn?
Your tutor will:
- demonstrate techniques which you will practice and experiment with
- prepare and cook meals and dishes using a variety of techniques and methods
- carry out research for, then create and cook a finished meal
- take part in individual and group reviews of finished work
- produce a portfolio showing your meals and dishes.
What could this course lead to?
Further courses in cookery techniques at Intermediate level, or a qualification in cookery at Level 2. It may also help you to get an interview for a job in catering.

To achieve success on the course you will need to attend regularly, and on time. If you need to miss a class, please let us know in advance.
You will need to ensure that you allow sufficient time for self-study and complete any homework set. You will be expected to complete all assessments and complete the full course.
What do I need to bring with me?
You will need to spend between £5 - £7 on ingredients for the sessions when you are cooking. For the first session you will need a pen, writing pad and a lever-arch folder.
